    This research delves into the critical issue of food waste within the hospitality sector, with a specific focus on Hemingways Watamu Hotel. By comprehensively examining the extent, causes, and environmental implications of food waste, this study seeks to provide a comprehensive understanding of the problem and to inform the development of effective mitigation strategies. The research employs a multifaceted approach, encompassing quantitative and qualitative methodologies to investigate food waste generation, management practices, and the potential for sustainable solutions. By exploring the complex interplay between operational factors, consumer behavior, and environmental impact, this study aims to identify key areas for improvement and inform the development of targeted interventions to reduce food waste at Hemingways Watamu. Ultimately, the findings of this research contribute to the growing body of knowledge on food waste management in the hospitality industry, offering valuable insights for industry stakeholders, policymakers, and researchers seeking to promote a more sustainable and resource-efficient future.

    THE EFFECT OF GOVERNMENT POLICIES ON THE DEVELOPMENT OF THE HOTEL INDUSTRY IN KENYA- CASE STUDY FOR THE FIVE-STAR HOTELS IN NAIROBI, MOMBASA, AND KISUMU.

    This research proposal aims to investigate the effect of government policies on the development of the hotel industry in Kenya, specifically focusing on five-star hotels in Nairobi, Mombasa, and Kisumu. The study will utilize a mixed-methods approach, using interviews and questionnaires to collect data from hotel owners, managers, and employees. The hotel industry is a significant contributor to Kenya's economy, and government policies play a crucial role in its growth and development. However, there is a limited understanding of the specific policies that impact the industry and how they affect its growth. Therefore, this study seeks to explore the relationship between government policies and the development of the hotel industry. The research will involve a sample of hotel owners, managers, and employees from five-star hotels in Nairobi, Mombasa, and Kisumu. The data collected from the study will be analyzed using both qualitative and quantitative methods. The qualitative data will be analyzed thematically, while the quantitative data will be analyzed using descriptive statistics. The study's findings will contribute to existing knowledge by identifying the specific government policies that have a significant impact on the development of the hotel industry in Kenya. This information will be useful in informing policymakers on the formulation of effective policies that promote the growth of the industry. Additionally, the study's findings will be useful to hotel industry stakeholders, particularly hotel owners, managers, and employees, in understanding the impact of government policies on their businesses and their roles in the industry's development. In conclusion, this research proposal presents an opportunity to gain insights into the effect of government policies on the development of the hotel industry in Kenya. The study's findings will be useful in guiding policymakers in formulating effective policies that promote the industry's growth and in providing industry stakeholders with a better understanding of the industry's development.

    IMPROVEMENT OF FRONT DESK SERVICES: A STRATEGY FOR INCREASED REVENUE GENERATION IN HOTELS IN RATED HOTELS. STUDY OF ACACIA KISUMU

    This research examines the improvement of the front desk with a focus on Acacia Premier Kisumu. By examining the causes, this study seeks to provide an understanding of the problem and to inform the development of effective mitigation strategies. This study investigates techniques for improving front-desk service by looking at issues such as staff training, technological integration, operational efficiency, and guest feedback channels. The study takes a mixed-methods approach, incorporating surveys of hotel visitors and personnel, observational studies, and case studies of top hotel brands. The findings emphasize the necessity of customized service, shorter check-in and check-out times, efficient communication, and the use of new technology such as self-check-in kiosks and customer relationship management (CRM) systems. Furthermore, the research emphasizes the importance of ongoing staff development in maintaining excellent service standards. The report concludes with recommendations for introducing cost effective, guest-centric innovations to improve front desk operations, resulting in increased visitor satisfaction and a competitive advantage in the hospitality industry.

    THE ROLE OF FRONT OFFICE DEPARTMENT TOWARDS GUEST SATISFACTION IN FIVE STAR IN NAIROBI :A LOOK AT KWETU CURIO COLLECTION BY HILTON NAIROBI.

    The primary goal of this study on the contribution of the front office department to client happiness at five-star hotels—Kwetu Curio Collection by Hilton—is to examine how the front office department affects customer satisfaction. The study will look into the responsibilities of the front office in visitor satisfaction, the hotel guest cycle, and new trends in the front office at Kwetu Curio; it will also look into the key areas for improvement. The research will use both quantitative and qualitative approaches to determine the function of the front office in guest satisfaction, with data collected through questionnaires. The study discovered that customers had a positive impression of the front desk staff at the hotel. However, the majority of the guests did not believe that the front desk staff inspired visitors and that information about the hotel was insufficiently available. It was also shown that the level of service provided by front desk workers has a substantial impact on client satisfaction. The front desk staff lacked treatment equality, attention to detail, and language proficiency. The report advises hotels to engage in highly motivated front desk staff through capacity building of front office staff on how to inspire visitors to attract more customers and training of the staff on how to be more sensitive to guest’s wants and preferences to improve the overall guest experience.

    The hospitality industry faces numerous challenges that impact operational efficiency, customer satisfaction, and profitability. This study focuses on identifying the key challenges faced by hotels, including workforce management issues, technological advancements, shifting customer expectations, and external pressures such as economic instability and sustainability requirements. Using a mixed-methods approach, the research involves interviews with hotel managers and analysis of industry performance data to understand these challenges comprehensively. It also proposes practical solutions, such as adopting advanced technologies, implementing targeted staff training, and integrating sustainable practices. The findings aim to provide actionable strategies to enhance hotel operations, improve service delivery, and ensure resilience in a competitive market. This study contributes to the hospitality industry by offering insights to address its evolving challenges effectively.

    IMPACT OF CUSTOMER RETENTION IN HOSPITALITY MANAGEMENT. CASE STUDY OF RADISSON BLU HOTEL AND RESIDENCE, ABORETUM NAIROBI.

    The hospitality industry is competitive in nature, making customer retention increasingly important. Nowadays, many hotels and restaurants invest in customer retention strategies which have proven to be a cost-effective venture and a cornerstone of enduring success for many hotels. This study aims to examine the impact of customer retention at the Radisson Blu Hotel and Residence. The study will give an understanding of the relationship between service quality and guest satisfaction and how it promotes customer retention. The study also aims to examine the factors that foster customer retention and the strategies that hotels implement to retain customers in the hospitality industry. This will be descriptive research that will adopt both the qualitative and quantitative method approaches. The population will be drawn from Radisson Blu staff, the top management, which will be purposively selected, and the other randomly selected staff. Research instruments that will be used are questionnaires and interviews. The data drawn from the interviews will be analyzed using content analysis, and the data drawn from the questionnaires will be analyzed through descriptive analysis. The findings of the study will provide knowledge on the impact of customer retention in hospitality management.

    INFLUENCE OF HUMAN RESOURCE MANAGEMENT IN THE HOTEL AND CATERING INDUSTRY: A CASE OF AMKA CAFÉ NAIROBI

    This study investigates the impact of human resource management (HRM) practices on the performance and success of businesses in the hospitality industry, with a particular focus on Amka Cafe. The research explores how HRM practices such as recruitment, training, employee engagement, performance management, and work-life balance influence service quality, employee satisfaction, and business outcomes. By examining HRM strategies and their implementation in Amka Cafe, the study aims to identify key HRM practices that contribute to effective management of human resources in the hospitality sector. The findings indicate that comprehensive recruitment and selection processes, continuous training and development, and robust employee engagement initiatives are critical for enhancing service quality and employee satisfaction. Effective performance management systems and support for work-life balance also play significant roles in maintaining high service standards and employee well-being. Additionally, HRM practices that promote diversity and inclusion, develop leadership, and foster a positive organizational culture contribute to a supportive and productive work environment. The research provides actionable recommendations for hospitality businesses aiming to improve their HRM practices and achieve sustainable growth and competitive advantage. The case study of Amka Cafe offers practical insights into how effective HRM practices can lead to business success, serving as a model for other organizations in the hospitality industry. This study underscores the importance of HRM practices in shaping organizational culture and driving overall business performance in the hospitality sector.
